Make gourmet Malai Kofta @ home

Ingredients for making Malai Kofta:
Paneer – One cup
boiled potatoes – Half cup
corn flour – 1 tsp bread
crumbs – 2 tsp
cardamom – 1/2 tsp
Javetari powder – 1/2 tsp
salt – 1/2 tsp

Ingredients for Stuffing Malai Kofta:
Cashews- 10 pcs
Raisins- 10 pcs
Ginger- 1 tsp
Green Chilli-1 tsp
Red Chilli Powder- 1/2 tsp
Cardamom-1/2 tsp
Javetari Powder-1 or 2 pinches of Salt- Dried
as per taste
Cumin powder-1 tsp

To make the stuffing, once the cashews and raisins are fried, add finely chopped ginger and green chillies. Now mix red chilli powder, salt according to taste, cardamom powder, javetari powder and prepare the stuffing.

Now make a kofta and fill it with stuffing, you can give the kofta any shape you want. Now let the oil heat in a pan, after the oil is heated put the prepared koftas one by one in the pan to fry them, fry the koftas till they turn light brown in color.

Now prepare the gravy for the kofta

Ingredients for gravy
Oil- 1 tbsp
Ghee- 1 tbsp
Dal Chini- 2 nos
Cumin- 1 tbsp
Tej Patta- 2 nos
whole Cardamom-
5 nos Pepper- 5 nos
Ginger Garlic Paste- 2 tbsp
Fry Onion- 2 or 3 big tbsp
Tomato Puree – 1/2 cup
brown cashew paste-1 tsp
red chilli-1 tsp
turmeric-1 tsp
coriander-1 tsp
garam masala powder-1 tsp yogurt-
1 cup cardamom –
1/2 tsp
Javetari powder-1/2 tsp
malai – 1 spoon
butter-1 spoon

How to make Gravy:
First of all put a pan on gas and let it heat, put oil in it, then add ghee to it, then add whole (ground) masala pepper, cumin, cinnamon, tej patta and let it fry. Now add ginger-garlic paste to it, add water to the ginger garlic paste and let it cook, keep stirring till the water comes out of the paste, now add brown onion paste in it, after cooking it for a few times, add tomato puree, now the water comes out in this gravy. Let it cook till then.

Now add curd to this after adding curd keep stirring it so that the curd does not break and stir this gravy till the water comes out of it, now add red chilli powder, coriander powder, garam masala powder, turmeric to this gravy and keep stirring it a little Add water to make the gravy neither too thick nor too thin. After a few minutes, after the gravy is ready, strain it through a juice strainer so that all the spices come out of it. Add butter to the gravy after thickening, add cardamom powder, javetari powder and let it heat for 2 or 3 minutes then add the prepared malai kofta and after some time switch off the gas.

Take the warm malai kofta ready at your home, take it out in a serving bowl and garnish it with cream and serve.
